Suitable Microcontrollers?

I would like to build my own control module for a racing motorcyle
EFI/ignition system.  I would imagine this topic has been covered before, but
I just joined the mailing list and would appreciate if someone would take the
time to comment again.

Is a general purpose 8 bit microcontroller such as an 80C32 fast enough for
this type of application?  I was thinking of starting there, and maybe
bailing myself out with a DS80C320 if it just wasn't fast enough.  I have
some experience with 8032 systems and would like to start here if its
feasable.

Recent Circuit Cellar Ink articles featured the M68HC16 development system,
but suggested that this was more than adequate.

Suggestions on other controllers, boards, or development systems would also
be welcome.
