If you coat the outside, but not the inside, the exhaust will rot from the
inside out, rather than both inside and outside, so what the coating will
do is keep a lot of the heat out of the engine compartment, but rot where
you can't see it.  Applying Jet-Hot (or other product) inside the header is
not that difficult.  You can brush it on, using a brush tied to a metal
rod, or possibly even a small rag wadded into a ball on a stick, much like
a barrel cleaner for a shotgun.  In fact, for 12 bucks, you can purchase a
barrel cleaner rod and shove your own rags through (grab an old t-shirt).

If you are coating headers, with all the bends, it gets more complex.  For
that I'd use a plastic, more flexible rod, and coat from each header inlet
as far as you can go, then stick the rod/rag through the collector outlet
and catch the rest of the tubing that way.
