Right, which is why most people have a AF gauge right alongside their EGT.
I use(d) an EGT for tuning on my car when it was just getting bolt ons, as a
four wheel dyno is about seven hours from my home and 200 dollars an hour.
Of course a dyno is the best way to tune your car
