Stoich is.....when there is a balance of elements on the left side and right side of the "equation"

Methane and oxygen (unbalanced)

CH4 +  O2  ->  CO2 + H20

The stoichiometric equation is when the number of atoms on the left equal the number of atoms on the right.

so

1 CH4 + 2 O2  -> 1 CO2 + 2 H2O


Seldom is there 100% complete combustion.
