[Diy_efi] Override/Passthrough EFI system?

Hi folks,
Has anyone thought off, has interest in, or has done something along the =
following lines:
Let's say I want to build a "piggyback" EMS, on a car that already has a =
working EMS system.
The piggyback system will have inputs:
all inputs of original EMS
all outputs of original EMS
=20
The piggyback will also has same set of outputs as the original EMS, =
plus some additional ones (say water injection)
Let's say most of the time the piggyback system simply do passthrough - =
no computation, just send the output of the original
EMS out.
But under some circumstances piggyback will "modify" the output of the =
original EMS and then send it out. Say for an water
injection system I will initially only want to control the water, plus =
maybe reducing the fuel a bit or some such.
Whould this be an easier way to develop mods, rather than hacking the =
insides of the original EMS?
Please post your comments. I am a software person so I know at the =
software level this could work. But don't know the
complexity / difficulty of setting up a hardware to "intercept" the =
original EMS input / outputs.
The two "candidate cars" I have: 91 Dodge Spirit, 95 Audi A6. I have no =
idea the ECU details on either car.
