A lot (in certain circumstances).
"What the catalyst essentially ends up doing (the 3-way type) is taking
the leftover O2 from lean cycles (which may be present as free oxygen, or
as NOx), and combining it with leftover HC/CO from rich cycles. The net
result being CO2, N2 and H2O, none of which is considered an emissions
gas." - C.C.
In other words, after the cat, you'll get an average, where before the cat
you get the instantaneous.
