Stoich is the point at which, under IDEAL
CIRCUMSTANCES, there is exactly enough fuel to use all
of the available oxygen with combustion. That means
the perfect combustion chamber in the perfect engine
with the perfect heat cycle, etc.

In the real world, combustion in a four-stroke engine
ain't perfect. Some of the fuel is ALWAYS going to
remain unburned for a variety of factors. Best power,
as a rule, is where there is sufficient EXCESS fuel
that all the oxygen really does get burned up, and
there is residual fuel (for the variety or reasons
that cause stoich to leave excess oxygen).
