I'm more than a little confused.  If the pressure
remains the same, then the same amount of air will be
entering the engine each intake cycle, throttle
position notwithstanding.

Why would it lean out if the intake manifold pressure
is not changing?  And if the pressure is not changing,
how can the rate of acceleration change?  The way you
describe it, that last 20% of pedal travel makes no
difference whatsoever in how the car runs.
