Some of my concerns would be.
1. Temp- the exhaust logs are water cooled along with the elbows.
So I would think a 3 wire sensor may be better for this application.
I always ran a min 180* thermostat any ways so the engine temp should
not be an issue.
2. water-The ideal would be in the dry exhaust prior to the elbow dump.
But some manifolds dump water straight from the manifold to the elbow
leaving no access to a dry port. You could close off 1 water jacket but
this may cause a hot spot in the manifold and increased temp in the
exhaust bellows. An inboard set up with risers before the elbow would
make an easier set up than some of the I/O's.
3. crossover- you are not sampling all cylinders so accuracy is
diminished.
Is it enough to worry about?
4. boats are a lot of WO throttle so WB tuning may be a great help in
tuning. You could also go open loop full time and just use the WB to set
the calibration.
Just some of my thoughts on a marine conversion.

Do you think there is enough flow in the intake crossover to be
effective?
