Hey, a local guy!
I'm new at this, too, and can't help at all on the drivetrain stuff, but
here's what I'm dealing with on my swap (7730 + TPI -> 340 + 69 Plymouth
Valiant):
Fuel delivery - seems that even a 5/16" line is OK for a return line, I'm
going to 3/8" on the feed.  If you've already got a 3/8" feed, you're
probably OK to use that as the feed unless you just want to have a larger
line.  I'm planning on using the aluminum tubing from Summit/Jegs and some
AN adapters.
Fuel pump - The pump I have is a NAPA part, if I recall.  I suspect it's
actually a reboxed Walbro or something.  Here's another local (Garland) guy

NOTE: you didn't mention it, but you'll probably have some fuel delivery
problems at low fuel levels in your stock tank if you're not planning on
some sort of sump or surge tank.  Even some fuel cells have this problem.
There isn't any reservoir in EFI like there is in a carb (bowls), so if the
pressure pump sucks air, it's not pushing anything until it recovers.  I'm
looking at a couple different types of surge tanks.  Check the previous
posts for the last few weeks for details.
Harness - I'd like to know if there's an adapter for the Vette box, too.
I'll be mounting mine inside the car, but would like to be able to mount it
in the engine bay.  Not a big deal, I'm running out of space up there
quickly.
