Fred,
Nice engine. I have a '96 300Zx Twin Turbo (which came with the VG30DETT).
While most of these are very similar (except for the 1996 - it's an OBD-II and they eliminated the variable intake valve timing on that year only - assuming that you are talking about North American versions), there are some differences.
I'd suggest going to twinturbo.net (you have to register, but it doesn't cost you anything and it will be a great resource for the VG30DETT - as that site specializes in the Z32 model Z cars - the ones with the motor that you have.
On that site, I'd post a wanted add for a Nissan shop manual for the appropriate year - and of course look through the for sale posts already there. You will probably find what you are looking for. Of course, you can always order that from Nissan, but I'm not sure how far back they go. Mine is 9 years old now, and that's the newest of the Z32s.
As far as the stand-alone engine management systems, I'd highly recommend Link Electrosystems (out of New Zeeland). They have a State-side dealer in California called Performance Developments. I running a custom Link-Plus system in my Z because there are "standard" chip tuners doing stuff for the '96. As there were only 500 of these built - the market is too small to make it worth it.
No - I don't work for either Link Electrosystems or Performance Developments - I just use one of their systems.
-Paul
