I think it is not possible to use eeprom over a eprom place ....only
FLASHPROM ......
to   use a greater eprom over a smaller size you have normally only to
duplicate the bin file
27c512 =  2x  27c256   that 's mean ( in the programer's buffer) copy from
$0000 until $7FFF  to $8000 until $FFFF-------------------- >>>>>>  this I
know it works.
27c512 = 4 x  27c128  ???  copy $0000 until $3FFF to $4000 until $7FFF and
copy again to $8000 until $BFFF and to $C000 until $FFFF
This I didnot test but i think it will works....????????
