The EGT is probably dropping because of the increased heat transfer to 
the cylinder wall caused by the vastly increased turbulence during 
knock.  A properly designed knock sensor based controller will respond 
much faster than a thermocouple in the exhaust will, reducing the 
chance of engine damage.  Neat way of tuning a mechanical system 
though!.
