Those would be vehicle wiring harness colors.

The actual HEGO wiring is:
Black: Sensor Output
White: Heater (+/- doesn't matter)
White: Heater (+/- doesn't matter) 
Gray:  Sensor Return (GND) 
If you use a Ford 3 wire sensor, it won't have the Gray wire as it uses
the case as GND.
