I think this will work  if you use the buffer (opamp) you can use any
old pot around the shop.

5v reg
   |  pot any size
  /             +--------------------+

  /             |          lm324             |________ output to cpu box

  /         |   +--------------------+    |

gnd

power  the opamp with same 5v supply  gain = 1 and has low output
impedence
