I'd say
1Hz for engine coolant temp
1Hz for air charge temp (more if sensor is fast)
2Hz for exhaust gases temp
5Hz for engine speed
10Hz for manifold pressure
10Hz for throttle position
20Hz for wide band lambda
Also, I'd use 10bits resolution for all of the above. With 6 bits for
counter ID, i.e 16 bit per sample, 128K will do 22+ minutes at the above
rates.
You need fast MAP, TPS and lambda to fine tune transient engine response.
