A couple guys are  doing something along these lines.
There are cheap DVMs.
The engine doesn't care if you reading the output at 2v or 13:1 AFR.
Once you deal with the AFR as just numbers, the actual ratio doesn't matter.
Remember you should be tuning for performance and just noting AFR changes,
and patterns
