First, yes, and the center (stoich) voltage reading will occur at STOICH
for the ethanol. If you have a digital readout of a/f ratio, it would need
to be recalibrated to suit ethanol's stoich a/f ratio.

Second, no, at least so long as there are no additives (metals?) in the
ethanol which might foul the cells in the sensor.
