Don't know for sure--but a reasonable guess would be that various molecular
"species" which exist during the combustion process reach a level of
"excitation" that causes them to emit UV when they change from one quantum
state to another.

The level of excitation involved is probably directly related to the fact
that they are gonna detonate. In fact, the UV may well be what sets off the
detonation.
