You could start by seeing what the manufacturers do.  Read as much as
you can on the gmecm page, especially tuning tips and programming 101. 
There is a list of books and papers on the diy_efi page that you could
look at.  If you're into assembly there are commented disassemblies of
several GM ECMs available on the gmecm page.  And you can find lots of
good stuff in the archives via the search engine.
