You can get pressure transducers for the harshest of environments, but
you'd pay out the wazoo.  How about something like a metal tube a foot
or two long that would  isolate the sensor from the high temps, and use
a regular MAP sensor.  I think there was a thread about this a while ago
and someone claimed that the temperature drop would affect the pressure
reading but this was found to be wrong.  As long as the aspect ratio of
the tube is not too extreme (ID vs. length) I don't think you'll have to
worry about it affecting the pressure readings much.  Even if it was a
long skinny tube, that would be the same as a low-pass filter on the
pressure signal, which might be adventageous for your purposes since the
pressure transients in the manifold have got to be really choppy, and I
think you want more of an average pressure type of reading, yes?
