Just to add to the problem...

Some engines simply refuse to idle properly at a calculated stoich A/F.

The tables are adjusted for a reason. The cycle to cycle delta rpm is exceeded
and the mixtures go up; simple really.

The concept of stoich is one that works well in chemistry books and some times
in engines.

The lack of compression due to throttling and therefor heat as well as the
very low air speeds in the manifold result in a loss of swirl and tumble as well

all this adds up to a very non homogenous mixture despite the fact that the
two ingredients were added by mass.

as the man said..."shaken not stirred"
