ECU scan tool that plugged INLINE between the wiring
harness and the ECU. It allowed you to monitor knock,
O2 voltage, duty cycle, sensors, etc. However that
tool is pretty rare, I have only seen one.

I did find updated software for my Romulator (rom
emulator) tonight that has an "address watch" feature
that might work ok.
