An edit-while-you drive emulator could be handy for writing 
a program that could monitor the engine (with a wideband O2 
perhaps) and adjust the fuel tables automatically while you 
concentrate on driving.

But yeah I agree, that's alot of glitter.

Personally since you have to stop, to do the program change 
what is the issue with restarting the engine??????.
