Jason,
depending on your background and what you want from such a text, 
you might look at a book called "Controller Tuning and Controller 
Loop Performance - PID without the Math" by David St. Clair. 
Practical stuff based on his experience without, well, the math. 
Check his web site http://members.aol.com/pidcontrol/ for a table 
of contents and a demo program.
