Andrew,
See if you can find any info on what the navy uses for "air scrubbers" in 
the sub's.  They can stay submerged for months without surfacing... Even 
the old Diesel powered subs could stay down a long time.
As to Oxygen monitoring, try Mine Safety Appliances (MSA).  they sell 
oxygen monitoring equipment for breathing air... A vehicles O2 sensor would 
always read extremely low (0.0-0.1 volts) even in atmosphere low enough in 
oxygen that you'd asphyxiate.
