Dissasemblers, Simos

Hi

What is a dissasembler exactly used for?
I know they are specific for every ecm.

What possibilitie are there for editing the bin file once extracted from the rom?

Does anyone have any information on the Simos system used ny Volkswagen on their 2.0 8V engines?

I'm still learning so please bear with me.
