So if you don't want to do that a/c wire swap (this is really no big
deal), just leave the a/c disabled until the end.

With the right relay, it's a simple one wire swap.  Are you going to
be switching ecm's repeatedly?  Later GM relays such as cooling fan,
a/c control, fog lights all have  normally closed and normally open
circuits which flip flop with the relay coil powered up.  There's a
$10.00 wiring tool available from the traveling tool dealers that
makes this kind of job a breeze.  Remember, the easiest solution isn't
always the one you're looking for. : )
