I'll ignore that comment, and let someone else delve into it.
BUT, THE MAIN ISSUE IS:

The coolant is exposed to temps in the range of 500dF around the exhuast
valve seat / guide areas (SBC, at about 1 HP/CID).  It is real easy to flash
the coolant into steam in those areas.  Steam will absorb little to no heat,
so in effect at high engine loads you can drive the exhaust valve temps
wayyyy over design spec..   What the thermostat does is help to localise a
high pressure area in the block so as to prevent this from happening.  What
you want is as much restriction as the engine can withstand, and have enough
flow to maintain whatever your selected operating temp is.   On a SBC this
*orfice* generally needs to be 5/8-3/4" diameter.  So you can see using a 1
3/4 hole in it's is exactly the opposite of what you want to do.   If your
runnning 9 secs at a time you may violate this rule, but it really takes a
mega motor with 110 octane to SOMETIMES use the non restriction setup.  If
you want to get into some one of a kind case, there are some, but few.   The
essence of running sans thermostat is a flat head era carry over.
